Tequila is Mexico's national spirit. Tequila is made from fermenting the sugar of the Blue Agave plant. Blue Agave is a member of the Lily family although it looks like a cactus. At the heart of the Blue Agave is the "pina" which produces the "aguamiel" or "honey water" that is the source of Tequila. Tequila must be produced within certain designated areas of Mexico, mostly in the state of Jalisco. In 1873, Don Cenbion Sauza named the spirit "tequila" after the colonial town.
